I hope you enjoy this fall-inspired ice cream. Its a super simple recipe that combines just four plant-based ingredients. I feel like if I'm not eating pumpkin-flavored foods I'm not properly celebrating the season so making this felt necessary.
3 ripe bananas
1 tbsp maple syrup or honey
1/4 cup pumpkin puree or butternut squash puree
1 tbsp pumpkin pie spice
prepare banana slices and freeze for at least 2 hours
combine bananas, puree, maple syrup, and pumpkin pie spice in a blender, and pulse until smooth
freeze mixture for an additional 1-2 hours
