This is a perfect light, summery meal that has a lot of flavor and a little crunch. I love this dish because its super filling, but it's completely fat-free so its a great detoxifying meal.
Buckwheat pasta is a new favorite gluten-free pasta of mine. The flavor is a little earthy but surprisingly really tasty. It's also high in protein and iron, so its a great staple for vegans looking for more plant-based protein/iron sources.
1 box buckwheat pasta (I like the Felicia Organic brand)
organic broccoli sprouts
1 garlic clove
1/2 organic lime
salt & pepper (I reccomend himalayan salt)
cook pasta according to package directions
drain and add to a salad bowl
add 1 big handful of arugula, and 1 big handful sprouts
mince and toss in fresh garlic
squeeze lime juice into the mixture
add salt and pepper to tase
stir to combine
