Simple Buckwheat Pasta Salad

This is a perfect light, summery meal that has a lot of flavor and a little crunch. I love this dish because its super filling, but it's completely fat-free so its a great detoxifying meal.


Buckwheat pasta is a new favorite gluten-free pasta of mine. The flavor is a little earthy but surprisingly really tasty. It's also high in protein and iron, so its a great staple for vegans looking for more plant-based protein/iron sources.


ingredients:

  • 1 box buckwheat pasta (I like the Felicia Organic brand)

  • organic arugula

  • organic broccoli sprouts

  • 1 garlic clove

  • 1/2 organic lime

  • salt & pepper (I reccomend himalayan salt)

directions:

  1. cook pasta according to package directions

  2. drain and add to a salad bowl

  3. add 1 big handful of arugula, and 1 big handful sprouts

  4. mince and toss in fresh garlic

  5. squeeze lime juice into the mixture

  6. add salt and pepper to tase

  7. stir to combine
